10 to 15 fresh mint leaves, plus 1 sprig for garnish
2 oz/60 ml Campo de Encanto Dist. RSV Single Vine Quebranta Pisco
1 oz/30 ml fresh lime juice
1 oz/30 ml Cocktail Syrup (page 59)
2 oz/60 ml seltzer
Lightly muddle the mint leaves in a highball glass, then pour in the liquid, add ice, and stir. Garnish with the mint sprig.

3/4 oz/20 ml fresh lime juice
3/4 oz/20 ml pineapple juice
1/2 oz/15 ml brandy
1/2 oz/15 ml Cocktail Syrup (page 59)
3 dashes peach bitters
